EP:10 Apple Pie


This is not a healthy recipe but my philosophy of healthy is not about deprivation but moderation. So I don’t deprive myself of the things I love I just enjoy them with moderation. Also the great thing about making treats yourself is that you can control exactly what’s in it, and reduce the sugar, fat or salt that you would get from store bought treats. Apple pie is one of my favourite things to eat firstly because it’s so delicious and secondly because my recipe is so easy.

Ingredients (for 1 large pie)

For the pastry

  • 225g plain flour

  • 100g butter, diced

  • pinch salt

  • 75g of granulated sugar

Method

  1. Put butter and freezer for half an hour

  2. In a bowl put flour, sugar and salt and mix well

  3. Using a grater, grate the frozen butter into the flour and mix

  4. At 1/4 cup of water and kneed with your hands to form a dough

  5. Once dough is formed cover with cling film and put in the freezer to chill while preparing the filling

For the filling

Ingredient

  • 3 granny smith apples

  • 2 pink lady apples

  • 1 tbsp spoon cinnamon

  • 3 tbsp flour

  • 4 tbsp spoon of butter

  • 50g of sugar

Method

  1. In a large bowl mix flour, sugar and cinnamon

  2. Peel and chop the apples into thin wedges and add to the cinnamon mix, and mix ensuring that all apple slices are covered and place to the side

  3. Take the pastry out of the fridge and cut of a third, so you are left with one large part and a small part.

  4. With the large part roll into a large circle large enough to cover the pie dish leaving enough for overhang.

  5. Place the rolled out pasty in the bottom of the pie dish and fill with the apple mix ensuring pie is well filled

  6. Take the butter and dot it over the apples

  7. With the smaller part of the pastry roll into a circle large enough to cover the pie dish

  8. Brush a little water around the pastry rim and lay the pastry lid over the apples pressing the edges together to seal.

  9. Trim the edge with a sharp knife and make 5 little slashes on top of the lid for the steam to escape.

  10. Brush the pie with the egg white and sprinkle with caster sugar

  11. Bake for 40-45 mins, until golden, then remove and let it sit for 5-10 mins.
