Peri-Peri Chicken
Ingredients
Juice of one lemon
1 white onion
1 red pepper
2 scotch pepper or pepper of your choice
1 tablespoon of smoked paprika
3/4 cup olive oil
4 cloves of garlic
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon salt
Chicken cut of your choice
Directions
Chop up all the ingredients and place in a food processor. If you do not have a food processor you can use a blender but you will have to add a quarter cup more oil and it will take a bit longer to become smooth.
Once the marinade is smooth cover the pour on the chicken making sure it is all covered. You can either use a large bowel or a zip lock freezer bag.
Cover/seal the chicken and put in the fridge for a minimum of 2 hours but ideally over night.
After the chicken has marinaded then you can cook wither in the oven or on the grill
for the oven I put the chicken legs in the oven for 40 mins at 200 degrees.
