Peri-Peri Chicken


Ingredients

  • Juice of one lemon

  • 1 white onion

  • 1 red pepper

  • 2 scotch pepper or pepper of your choice

  • 1 tablespoon of smoked paprika

  • 3/4 cup olive oil

  • 4 cloves of garlic

  • 2 teaspoons dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • Chicken cut of your choice

Directions

  1. Chop up all the ingredients and place in a food processor. If you do not have a food processor you can use a blender but you will have to add a quarter cup more oil and it will take a bit longer to become smooth.

  2. Once the marinade is smooth cover the pour on the chicken making sure it is all covered. You can either use a large bowel or a zip lock freezer bag.

  3. Cover/seal the chicken and put in the fridge for a minimum of 2 hours but ideally over night.

  4. After the chicken has marinaded then you can cook wither in the oven or on the grill

  5. for the oven I put the chicken legs in the oven for 40 mins at 200 degrees.
