Piña colada/ Pineapple and Coconut drink
I love this drink because it’s delicious, it’s cheap and its super easy to make.
Coconut milk: Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk, coconut milk is lactose free so can be used as a milk substitute by those with lactose intolerance. It is a popular choice with vegans and makes a great base for smoothies, milkshakes or as a dairy alternative in baking. Coconut milk is also thought to protect the body against infections and viruses.
Pineapple: pineapple is full of vitamin C; vitamin C is powerful antioxidant that will provide your body with protection against free radicals. Vitamin C is also vital for the function of the immune system and can protect against flue and cold. Pineapple is also a rich source of bromelian which is a compound that can help to promote digestive health and has anti-inflammatory properties. In addition to bromelain, pineapple is a good source of thiamin, a B vitamin that acts as a cofactor in enzymatic reactions central to energy production.
Ingredients
Half a small pineapple
500ml coconut milk
Ice to serve
Method
Put all ingredient in a strong blender and blend until smooth, serve with ice and enjoy.
