Ep:07 Lemon & Herb Chicken Kebab with Tzatziki Sauce
Episode 9: Lemon and herb chicken kebabs with a tzatziki sauce
This recipe is inspired by my love of Mediterranean food. I think kebabs are the perfect way to make an easy healthy meal that ticks all the boxes; tastes good, looks good and does good to your body. The marinade I make for this is super simple and be used for any chicken recipe. This meal is low fat, low sodium and the vegetables supply a bounty of vitamins and minerals. The tzatziki sauce is a great alternative to shop bought sauces that are full of salt and chemicals. This dish is a real crowd pleaser prefect for entertaining.
Ingredients for the kebabs
2 large chicken breasts
3 medium red onions
3 large courgettes
3 bell peppers (colours of your choice)
Ingredient for the marinade
2 medium lemons
5 tbsp spoon of olive oil
1 tsp of dried oregano
1 tbsp of dried basil
1 tbsp of dried time
Salt and pepper to taste
Method
Mix the ingredient of the marinade together in a bowel and out to the side
Chop the veg and chicken to bitesize pieces place in a baking tray and rub the marinade all over
Cover the tray with plastic wrap and leave to marinade in the fridge for a minimum of 1 hour but the longer the better
Place pieces of vegetables and chicken alternately on to metal skewers (if you are using wooden skewers make sure to soak them in water 30 mins before using them otherwise they will burn)
Cook the skewers in the oven for 35 mins.
Ingredients for the tzatziki sauce
1 ½ cups of Greek yogurt
Juice and zest of 1 lemon
½ cucumber grated
3 clove of garlic finely grated
2 tablespoons of olive oil
Salt and pepper to taste
Mint leaves (optional)
Method
Put the yogurt into a bowel add the grated cucumber, lemon juice/zest, olive oil, garlic, salt and pepper and mix well
